Spring
Our little family has been busy.

My baby's favourite place to hang out.
Life takes us in many directions.
Ellie and Lucy are both in basketball camp.
Penny is busy being Penny and dragging us to costco for poutine....
I don't see Dusty anymore. I have lost him to the great outdoors or barn or shed.
Andy is growing. We got put on a two hour feeding regime....
It's time consuming....
Life consuming....
I got back at lessons this week. I am excited for this spring set. I have a new plan. More fun. They went pretty well. It helps that Andy usually loves his car seat. So hopefully he continues with that trend and we'll be set!

With a Smile and a Song
Andy is three months old.
There have been lots of little changes with him.
He is turning from a very serious scowler into a happy smiley baby.
We even got a good belly laugh from him last night.
We had a family meeting last night. Nothing major. We try to do one every once in a while just to see what's going on.
We started with Lucy. She wants allowance. She also wants it without doing any work! Haha yah right kid!!!
Then Ellie... There was nothing wrong or right.
And then it was Penny's turn. That kid can talk.... And sing. She kept creating little dramas or things so that her turn wouldn't end. What a kid!!

Superior Species...
He is hungry and angry
My lambs are cute
And fat
And frolicy
They jump on the ewes
They steal their grain
And eat their hay.
Andy lays
He cries.
And I go to him.
I change him
I find him so he can eat.
He is completely and utterly dependant.
It's actually a miracle we were never wiped out...
That was my thought for this lovely Friday.
Gluten free Dairy free Egg free Corn bread
Corn bread
1 cup cornmeal
1 cup rice flour
3/4 cup margarine
3/4 cup white sugar
3/4 cup almond milk
2 tsp baking powder
1 tsp baking soda
2 Tablespoons chia seeds soaked in 4Tbs of warm water
Mix wet together. Mix dry together. Combine stirring the least amount of times possible. Put in greased 8x8 pan and bake at 350 for 20+ minutes.
The taste and texture were great. It was a bit crumbly.

Gluten free- diary free- egg free- sugar free Banana Walnut Muffins
I browse through pinterest daily for some sort of light bulb moment or hope that I find something that looks like what I want.
Last night I found a banana muffin that looked like it could pass

It has buckwheat in it.
Not my favorite...
So I swapped it for Sorghum
There were a few more trades made...
Banana Walnut Muffins
1 heaping cup sorghum flour
1 scant cup of tapioca starch
2 heaping teaspoons of baking powder
1 cup of walnuts smashed
Put above in bowl
Get out food processor.
1/2 cup almond milk
3 bananas
1 tsp vanilla
1 cup of dates (soaked in hot water for 10 minutes)
Process.
Add dry.
Scoop into greased muffin tins until full.
Bake at 375 for 20 minutes
Penny ate hers with homemade chocolate sauce.

All Things Baby
and birthday
but I didn't take pictures of that...
Both my sister and my SIL had birthdays this last week
we ate
we visited
it was good.
but in between all the birthday stuff
was baby stuff.
This is our only ewe lamb.
Her name is Jackie...
you will see why tomorrow...
This poor wee gaffer had a rough start.
He was rejected.
We are going to wether him and keep him for a companion.
And this is the big boy.
he's a solid sucker.
and to top off all the babes at home...
a friend and I threw a little shower for another friend.
I should of gotten someclose-ups
but the theme was camping and it turned out super cute!
Now we are on to the next week
and
Andy has a man cold
i think we will be hanging out at home!!

Labels

My friend introduced me to "clean" eating.
Not a new concept
More of a throw away processed foods and get back to "the good ol' days"
You know like horse and buggy cooking.
Since then I read a lot of labels at the grocery store
(yes I am one of those people who spend an agonizing amount of time reading labels, blocking amd contesting the isles at the store)
I am always amazed at the crap that is in food.
Now more than ever I am scouring labels again
With greater purpose I suppose.
It has really brought me back to cooking.
I found a recipe for condensed cream of chicken soup.
I have been missing creamy sauces on rice
So when I saw this I knew I had to try to make is gluten, dairy, and egg free.
RECIPE
3 cups of chicken broth
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp parsley
1/4 tsp pepper
Sprinkle of paprika
1/2 cup of tapioca starch (or corn starch)
3 cups of coconut milk or almond.
Boil the stock and 2 cups of milk with the seasonings. Add the starch to the remaining milk. Whisk into boiling stock (medium heat) and cook 2 minutes. Keep stirring. Turn off heat and carefully ladle into jars. It will make about 3 500ml jars. Store in fridge.

Spring- weather we like it or not.
So last night happened to be one of THE coldest nights of the year.
And true to form
Our ewes decided to give birth.
Burr.
Wet 4lbs babies in -45.
Not such a good mix.
After some help and a really long night
ALL three seem to be eating and warm.
Not as warm as Andy
Who got to sleep all night in a heated bed.
